Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup vegetable oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, cut into chunks
- 1 bell pepper, cut into chunks
Instructions
- In a large bowl, combine the vegetable oil, lemon juice, minced garlic, paprika, cayenne pepper, cumin, coriander, salt, and black pepper. Add the chicken cubes and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, onion, and bell pepper onto skewers, alternating the ingredients.
- Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
