Manu Whakarite (hāngī-style Roast Chicken)

Ingredients

  • 1 whole chicken, about 1.5 kg
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 lemon, sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Place the sliced onions, minced garlic, carrots, and potatoes in a roasting pan.
  3. Rub the chicken with olive oil and season with salt and pepper. Place the lemon slices inside the cavity of the chicken.
  4. Place the chicken on top of the vegetables in the roasting pan.
  5. Cover the roasting pan with foil and roast in the preheated oven for 1.5 hours.
  6. Remove the foil and continue roasting for another 30 minutes or until the chicken is golden brown and cooked through.
  7. Let the chicken rest for 10 minutes before carving.
