Manu Whakarite (hāngī-style Roast Chicken)
Manu Whakarite is a traditional New Zealand dish that is similar to a Hāngī-style roast chicken. It is a delicious and flavorful dish that is perfect for a special occasion or a family meal.
Ingredients
- 1 whole chicken, about 1.5 kg
- 2 onions, sliced
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 potatoes, diced
- 1 lemon, sliced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- Place the sliced onions, minced garlic, carrots, and potatoes in a roasting pan.
- Rub the chicken with olive oil and season with salt and pepper. Place the lemon slices inside the cavity of the chicken.
- Place the chicken on top of the vegetables in the roasting pan.
- Cover the roasting pan with foil and roast in the preheated oven for 1.5 hours.
- Remove the foil and continue roasting for another 30 minutes or until the chicken is golden brown and cooked through.
- Let the chicken rest for 10 minutes before carving.
