Ingredients

  • 16 fresh Manx Queenies (scallops), cleaned
  • 1/2 cup (115g) unsalted butter
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Pat the scallops dry with paper towels and season with salt and pepper.
  2. In a large skillet, melt the butter over medium-high heat.
  3. Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set aside.
  4. Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Remove the skillet from the heat and stir in the fresh lemon juice to make the black butter sauce.
  6. Pour the black butter sauce over the cooked scallops and serve immediately.
