Ingredients

  • 4 lamb shanks
  • 2 onions, sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups beef broth
  • 2 cups red wine
  • 2 bay leaves
  • 1 tbsp rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the lamb shanks with salt and pepper.
  3. Heat a large oven-safe pot over medium-high heat and brown the lamb shanks on all sides. Remove from the pot and set aside.
  4. Reduce the heat to medium and add the onions, garlic, carrots, and celery to the pot. Cook until the vegetables are softened.
  5. Pour in the beef broth and red wine, then add the bay leaves and rosemary. Bring to a simmer.
  6. Return the lamb shanks to the pot, cover, and transfer to the preheated oven. Cook for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
  7. Once cooked, remove the lamb shanks from the pot and keep warm. Strain the cooking liquid and vegetables, then return the liquid to the pot. Simmer until the sauce is reduced and thickened.
  8. Serve the lamb shanks with the reduced sauce and your choice of side dishes.
