Ingredients
- 1 leg of lamb, bone-in
- 4 large kumara (sweet potatoes), peeled and cubed
- 2 onions, sliced
- 4 carrots, peeled and chopped
- 4 cups of water
- Salt and pepper to taste
Instructions
- Prepare the hangi pit by heating stones over a fire until they are extremely hot.
- Season the leg of lamb with salt and pepper, then wrap it in foil.
- Place the lamb, kumara, onions, and carrots in a wire basket or on a wire rack, then lower it into the hangi pit.
- Cover the food with damp cloth or banana leaves, then cover the pit with earth to trap the heat.
- Cook for 4 hours, then carefully remove the food from the hangi pit.
- Boil the kumara in water until tender, then mash them with a fork or potato masher.
- Serve the Maori Hangi Lamb with Kumara Mash hot, with the vegetables and a side of mint sauce.
