Ingredients

  • 2 lbs fresh mussels, cleaned and debearded
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 large potatoes, peeled and diced
  • 4 cups fish or vegetable stock
  • 1 cup coconut milk
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  2. Add the diced potatoes and cook for a few minutes, stirring occasionally.
  3. Pour in the fish or vegetable stock, coconut milk, and add the bay leaf. Bring to a simmer and cook until the potatoes are tender.
  4. Add the cleaned mussels to the pot and cook for 5-7 minutes, or until the mussels have opened.
