Maori Mussel Chowder

Ingredients
- 2 lbs fresh mussels, cleaned and debearded
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 large potatoes, peeled and diced
- 4 cups fish or vegetable stock
- 1 cup coconut milk
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.
- Add the diced potatoes and cook for a few minutes, stirring occasionally.
- Pour in the fish or vegetable stock, coconut milk, and add the bay leaf. Bring to a simmer and cook until the potatoes are tender.
- Add the cleaned mussels to the pot and cook for 5-7 minutes, or until the mussels have opened.
- Season the chowder with salt and pepper to taste.
