Mapo Chicken (麻婆鸡)

Ingredients
- 1 lb boneless, skinless chicken thighs, cut into small pieces
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped
- 2 tbsp doubanjiang (spicy bean paste)
- 1 tbsp soy sauce
- 1 cup chicken broth
- 1 tsp sugar
- 1 tsp Sichuan peppercorns, toasted and ground
- 1 tbsp cornstarch mixed with 2 tbsp water
- Cooked white rice, for serving
Instructions
- Heat the vegetable oil in a large skillet over medium heat. Add the garlic, ginger, and green onions, and cook for 1-2 minutes until fragrant.
- Add the doubanjiang and soy sauce to the skillet, and stir to combine.
- Add the chicken pieces to the skillet and cook until they are no longer pink.
- Pour in the chicken broth and add the sugar and ground Sichuan peppercorns. Bring to a simmer.
- Stir in the cornstarch mixture and cook until the sauce has thickened.
- Serve the Mapo Chicken over cooked white rice.
