Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into small pieces
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green onions, chopped
  • 2 tbsp doubanjiang (spicy bean paste)
  • 1 tbsp soy sauce
  • 1 cup chicken broth
  • 1 tsp sugar
  • 1 tsp Sichuan peppercorns, toasted and ground
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • Cooked white rice, for serving

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the garlic, ginger, and green onions, and cook for 1-2 minutes until fragrant.
  2. Add the doubanjiang and soy sauce to the skillet, and stir to combine.
  3. Add the chicken pieces to the skillet and cook until they are no longer pink.
  4. Pour in the chicken broth and add the sugar and ground Sichuan peppercorns. Bring to a simmer.
  5. Stir in the cornstarch mixture and cook until the sauce has thickened.
  6. Serve the Mapo Chicken over cooked white rice.
