Ingredients
- 1 block (14 oz) soft tofu, cut into cubes
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/4 lb ground pork
- 2 tbsp doubanjiang (spicy bean paste)
- 1 tbsp soy sauce
- 1 cup chicken or vegetable broth
- 1 tsp sugar
- 1/2 tsp Sichuan peppercorns, toasted and ground
- 2 green onions, thinly sliced
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the minced garlic and ginger, and stir-fry for 1-2 minutes until fragrant.
- Add the ground pork and cook until browned, breaking it up with a spatula.
- Stir in the doubanjiang and soy sauce, then pour in the broth and add the tofu cubes.
- Simmer for 10-15 minutes, allowing the flavors to meld and the tofu to absorb the sauce.
- Stir in the sugar and ground Sichuan peppercorns, then garnish with sliced green onions.
