Ingredients

  • 1 block (14 oz) soft tofu, cut into cubes
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/4 lb ground pork
  • 2 tbsp doubanjiang (spicy bean paste)
  • 1 tbsp soy sauce
  • 1 cup chicken or vegetable broth
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns, toasted and ground
  • 2 green onions, thinly sliced

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the minced garlic and ginger, and stir-fry for 1-2 minutes until fragrant.
  3. Add the ground pork and cook until browned, breaking it up with a spatula.
  4. Stir in the doubanjiang and soy sauce, then pour in the broth and add the tofu cubes.
  5. Simmer for 10-15 minutes, allowing the flavors to meld and the tofu to absorb the sauce.
  6. Stir in the sugar and ground Sichuan peppercorns, then garnish with sliced green onions.
