Ingredients
- 1 block (14 oz) firm tofu, cubed
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/2 lb ground pork
- 2 tbsp Sichuan peppercorns
- 2 tbsp doubanjiang (broad bean paste)
- 1 cup chicken or vegetable broth
- 2 green onions, chopped
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp sesame oil
- 2 tsp cornstarch mixed with 2 tbsp water
Instructions
- Heat the vegetable oil in a wok or large skillet over medium heat.
- Add the garlic, ginger, and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.
- Add the ground pork and cook until browned, breaking it up with a spoon.
- Stir in the doubanjiang and cook for another 2 minutes.
- Pour in the broth and bring to a simmer.
- Gently slide in the tofu cubes and simmer for 5-7 minutes.
- Stir in the green onions, soy sauce, sugar, and sesame oil.
- Finally, add the cornstarch mixture and gently stir until the sauce thickens.
- Serve hot with steamed rice.
