Mapo Tofu Madness (麻婆豆腐疯狂)

Ingredients

  • 1 block (14 oz) firm tofu, cubed
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/2 lb ground pork
  • 2 tbsp Sichuan peppercorns
  • 2 tbsp doubanjiang (broad bean paste)
  • 1 cup chicken or vegetable broth
  • 2 green onions, chopped
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • 2 tsp cornstarch mixed with 2 tbsp water

Instructions

  1. Heat the vegetable oil in a wok or large skillet over medium heat.
  2. Add the garlic, ginger, and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.
  3. Add the ground pork and cook until browned, breaking it up with a spoon.
  4. Stir in the doubanjiang and cook for another 2 minutes.
  5. Pour in the broth and bring to a simmer.
  6. Gently slide in the tofu cubes and simmer for 5-7 minutes.
  7. Stir in the green onions, soy sauce, sugar, and sesame oil.
  8. Finally, add the cornstarch mixture and gently stir until the sauce thickens.
  9. Serve hot with steamed rice.
