Maqloba (sudanese Eggplant And Tomato Stew)

Ingredients
- 2 large eggplants, sliced
- 4 tomatoes, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 2 cups vegetable broth
- 1 cup basmati rice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until softened.
- Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the sliced eggplants and tomatoes to the pot, and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally.
- Pour the vegetable broth into the pot and bring to a simmer. Add the basmati rice, cover, and cook for 15-20 minutes until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, carefully invert the pot onto a large serving platter to reveal the layers of eggplant and tomato. Serve hot and enjoy!
