Maqloba (sudanese Spiced Beef And Eggplant Stew)
Maqloba, also known as upside-down rice, is a popular Sudanese dish that features layers of spiced beef, eggplant, and rice. This flavorful stew is a comforting and satisfying meal that is perfect for sharing with family and friends.
Ingredients
- 1 1/2 lbs beef, cubed
- 2 eggplants, sliced
- 2 cups basmati rice
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 4 cups beef or vegetable broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season the beef with salt, pepper, cumin, coriander, turmeric, and cayenne pepper.
- In a large pot, brown the beef over medium heat. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the rice and stir to coat with the onion and garlic.
- Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
- Arrange the eggplant slices over the rice, then top with the browned beef.
- Cover and continue to simmer for 20-25 minutes, or until the rice is cooked and the beef is tender.
- Once done, carefully invert the pot onto a large serving platter to reveal the layers of beef, eggplant, and rice.
- Sprinkle with chopped parsley before serving.
