Ingredients

  • 1 1/2 lbs beef, cubed
  • 2 eggplants, sliced
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 4 cups beef or vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, cumin, coriander, turmeric, and cayenne pepper.
  2. In a large pot, brown the beef over medium heat. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the rice and stir to coat with the onion and garlic.
  5. Pour in the broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  6. Arrange the eggplant slices over the rice, then top with the browned beef.
  7. Cover and continue to simmer for 20-25 minutes, or until the rice is cooked and the beef is tender.
  8. Once done, carefully invert the pot onto a large serving platter to reveal the layers of beef, eggplant, and rice.
  9. Sprinkle with chopped parsley before serving.
