Maqloba (sudanese Spiced Lamb And Eggplant Stew)
Maqloba is a traditional Sudanese dish that features spiced lamb and eggplant stew layered with fragrant rice. This hearty and flavorful stew is a staple in Sudanese cuisine and is perfect for a comforting family meal or special occasions.
Ingredients
- 1 1/2 lbs lamb, cut into cubes
- 2 large eggplants, sliced
- 2 cups basmati rice
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 4 cups chicken or vegetable broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season the lamb with salt, pepper, cumin, coriander, turmeric, cinnamon, and cayenne pepper.
- Heat some oil in a large pot and brown the lamb over medium-high heat. Remove the lamb from the pot and set aside.
- In the same pot, sauté the onions and garlic until softened. Add the diced tomatoes and cook for a few minutes.
- Return the lamb to the pot and pour in the broth. Bring to a boil, then reduce the heat and let it simmer for 45 minutes.
- While the stew is simmering, prepare the rice according to package instructions.
- Once the stew is done, remove the pot from the heat and carefully layer the sliced eggplants on top of the stew.
- Cover the pot and let it sit for 10 minutes to allow the steam to cook the eggplants.
- Fluff the cooked rice with a fork and transfer it to a large serving platter.
- Carefully invert the pot onto the serving platter to reveal the layers of spiced lamb, eggplant, and rice.
- Sprinkle the chopped parsley over the maqloba and serve hot.
