Maqloba (sudanese Spiced Lamb And Eggplant Stew)

Ingredients

  • 1 1/2 lbs lamb, cut into cubes
  • 2 large eggplants, sliced
  • 2 cups basmati rice
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups chicken or vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt, pepper, cumin, coriander, turmeric, cinnamon, and cayenne pepper.
  2. Heat some oil in a large pot and brown the lamb over medium-high heat. Remove the lamb from the pot and set aside.
  3. In the same pot, sauté the onions and garlic until softened. Add the diced tomatoes and cook for a few minutes.
  4. Return the lamb to the pot and pour in the broth. Bring to a boil, then reduce the heat and let it simmer for 45 minutes.
  5. While the stew is simmering, prepare the rice according to package instructions.
  6. Once the stew is done, remove the pot from the heat and carefully layer the sliced eggplants on top of the stew.
  7. Cover the pot and let it sit for 10 minutes to allow the steam to cook the eggplants.
  8. Fluff the cooked rice with a fork and transfer it to a large serving platter.
  9. Carefully invert the pot onto the serving platter to reveal the layers of spiced lamb, eggplant, and rice.
  10. Sprinkle the chopped parsley over the maqloba and serve hot.
