Ingredients
- 2 cups dried brown lentils
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, sauté the chopped onion and garlic until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper to the pot, stirring for 1-2 minutes until fragrant.
- Pour in the vegetable broth and add the rinsed lentils. Bring to a boil, then reduce the heat and let the stew simmer for 40-45 minutes, or until the lentils are tender.
- Season with salt to taste and serve hot, garnished with fresh cilantro.
