Ingredients

  • 2 cups dried brown lentils
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, sauté the chopped onion and garlic until softened.
  3. Add the cumin, coriander, turmeric, and cayenne pepper to the pot, stirring for 1-2 minutes until fragrant.
  4. Pour in the vegetable broth and add the rinsed lentils. Bring to a boil, then reduce the heat and let the stew simmer for 40-45 minutes, or until the lentils are tender.
