Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes to toast the spices.
  4. Pour in the beef broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
  5. Season with salt and pepper to taste.
  6. Serve the Marak Laham hot, garnished with chopped fresh cilantro.
