Marak Laham (yemeni Spiced Beef Stew)
Marak Laham is a traditional Yemeni spiced beef stew that is packed with flavor and warmth. This hearty stew is perfect for a comforting meal, especially during the colder months.
Ingredients
- 2 lbs beef stew meat, cubed
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 4 cups beef broth
- 2 tbsp vegetable oil
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the diced tomatoes, tomato paste, and all the spices. Cook for a few minutes to toast the spices.
- Pour in the beef broth and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
- Season with salt and pepper to taste.
- Serve the Marak Laham hot, garnished with chopped fresh cilantro.
