Marak Samak (omani Spiced Fish And Cabbage Stew)

Ingredients

  • 1 lb white fish fillets, such as cod or grouper
  • 1 small cabbage, chopped
  • 2 tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • 4 cups fish or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the turmeric, cumin, coriander, and cayenne pepper to the pot, and stir for 1 minute to toast the spices.
  3. Add the chopped cabbage and diced tomatoes to the pot, and cook for 5 minutes, stirring occasionally.
  4. Pour in the fish or vegetable broth, and bring the mixture to a simmer.
  5. Gently place the fish fillets into the pot, and let them cook for 10-15 minutes, or until they are opaque and flake easily with a fork.
  6. Season the stew with salt and pepper to taste.
  7. Serve the Marak Samak hot, garnished with fresh cilantro if desired.
