Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 cup canned chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 cups vegetable or fish broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro leaves for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
  3. Add the canned tomatoes, vegetable or fish broth, and chickpeas. Bring the mixture to a simmer.
  4. Gently place the fish fillets into the pot, making sure they are submerged in the liquid. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
  5. Season with salt and pepper to taste. Serve the Marak Samak hot, garnished with fresh cilantro leaves.
