Marak Samak (omani Spiced Fish And Chickpea Stew)
Marak Samak is a traditional Omani spiced fish and chickpea stew that is bursting with flavor and warmth. This hearty stew is perfect for a cozy family dinner or for entertaining guests.
Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 cup canned chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 2 cups vegetable or fish broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro leaves for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for another 2 minutes, stirring constantly.
- Add the canned tomatoes, vegetable or fish broth, and chickpeas. Bring the mixture to a simmer.
- Gently place the fish fillets into the pot, making sure they are submerged in the liquid. Cover and simmer for 15-20 minutes, or until the fish is cooked through.
- Season with salt and pepper to taste. Serve the Marak Samak hot, garnished with fresh cilantro leaves.
