Ingredients

  • 500g white fish fillets, cut into chunks
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red chili, finely chopped
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 400ml coconut milk
  • 2 tomatoes, diced
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  2. Add the ground turmeric, cumin, and coriander. Stir well to coat the onions and spices.
  3. Pour in the coconut milk and bring to a gentle simmer.
  4. Add the diced tomatoes and lime juice. Season with salt to taste.
  5. Gently place the fish chunks into the stew. Cover and let it simmer for about 15-20 minutes, or until the fish is cooked through.
  6. Once the fish is cooked, garnish with fresh cilantro and serve hot with steamed rice or flatbread.
