Marak Samak (omani Spiced Fish And Potato Stew)

Ingredients

  • 500g white fish fillets, cut into chunks
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 2 tomatoes, chopped
  • 4 cups fish or vegetable broth
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the turmeric, cumin, coriander, cinnamon, and cayenne pepper. Stir well to coat the onions and garlic with the spices.
  3. Add the diced potatoes and chopped tomatoes. Pour in the fish or vegetable broth and bring to a simmer.
  4. Gently add the fish chunks to the pot. Season with salt and pepper, then cover and let it simmer for about 20-25 minutes, or until the potatoes are tender and the fish is cooked through.
  5. Once done, taste and adjust the seasoning if needed. Serve the Marak Samak hot, garnished with chopped fresh cilantro.
