Ingredients

  • 1 kg white fish fillets, such as hammour or cod
  • 2 tablespoons Omani spice mix
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 green chili, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cups fish or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Pat the fish fillets dry and rub them with the Omani spice mix. Set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until softened.
  3. Add the minced garlic, diced tomatoes, and green chili to the pot. Cook for a few minutes until the tomatoes start to break down.
  4. Stir in the ground turmeric, cumin, and coriander, and cook for another minute to toast the spices.
  5. Pour in the fish or vegetable broth and bring the mixture to a simmer.
  6. Gently add the seasoned fish fillets to the pot and let them cook in the stew for about 10-15 minutes, or until they are cooked through.
  7. Season the stew with salt and pepper to taste.
  8. Serve the Marak Samak hot, garnished with fresh cilantro.
