Marak Samak (omani Spiced Fish And Tomato Stew)
Marak Samak is a traditional Omani spiced fish and tomato stew that is bursting with flavor. This hearty and comforting dish is a staple in Omani cuisine and is perfect for a cozy family meal.
Ingredients
- 1 kg white fish fillets, such as hammour or cod
- 2 tablespoons Omani spice mix
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 green chili, chopped
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cups fish or vegetable broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Pat the fish fillets dry and rub them with the Omani spice mix. Set aside.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until softened.
- Add the minced garlic, diced tomatoes, and green chili to the pot. Cook for a few minutes until the tomatoes start to break down.
- Stir in the ground turmeric, cumin, and coriander, and cook for another minute to toast the spices.
- Pour in the fish or vegetable broth and bring the mixture to a simmer.
- Gently add the seasoned fish fillets to the pot and let them cook in the stew for about 10-15 minutes, or until they are cooked through.
- Season the stew with salt and pepper to taste.
- Serve the Marak Samak hot, garnished with fresh cilantro.
