Ingredients

  • 1 cup red lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water and set aside.
  2. In a large pot, sauté the onions and garlic until fragrant.
  3. Add the diced carrots, ground cumin, ground coriander, and turmeric. Cook for 2-3 minutes.
  4. Pour in the vegetable broth and add the diced tomatoes. Bring to a boil.
  5. Stir in the red lentils and reduce the heat to a simmer. Cook for 30-35 minutes or until the lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve the Marak Samak hot, garnished with fresh cilantro.
