Ingredients
- 1 cup red lentils
- 2 carrots, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water and set aside.
- In a large pot, sauté the onions and garlic until fragrant.
- Add the diced carrots, ground cumin, ground coriander, and turmeric. Cook for 2-3 minutes.
- Pour in the vegetable broth and add the diced tomatoes. Bring to a boil.
- Stir in the red lentils and reduce the heat to a simmer. Cook for 30-35 minutes or until the lentils are tender.
- Season with salt and pepper to taste.
