Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 4 carrots, peeled and sliced
- 4 celery stalks, sliced
- 1 tablespoon hawayej spice blend
- 8 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions, carrots, and celery until they start to soften.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the hawayej spice blend, then pour in the chicken broth.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through.
- Season with salt and pepper to taste.
- Serve the Marak Temani hot, garnished with fresh herbs if desired.
