Ingredients
- 8 oz. linguine
- 1/2 cup diced bell peppers
- 1/2 cup diced red onion
- 1/2 cup sliced andouille sausage
- 1 can (14 oz.) diced tomatoes
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
Instructions
- Boil a large pot of salted water and cook the linguine according to package instructions. Drain and set aside.
- In a large skillet, sauté the bell peppers, red onion, and andouille sausage until the vegetables are tender and the sausage is browned.
- Add the diced tomatoes, minced garlic, and Cajun seasoning to the skillet. Cook for 2-3 minutes.
- Pour in the chicken broth and heavy cream. Simmer for 5 minutes, allowing the sauce to thicken.
- Add the cooked linguine to the skillet and toss to coat the pasta with the sauce.
- Sprinkle Parmesan cheese over the pasta and toss again. Season with salt and pepper to taste.
- Serve the Mardi Gras pasta hot, garnished with additional Parmesan cheese if desired.
