Maribor Pumpkin Risotto (Mariborski Bučni Rižot)
Mariborski Bučni Rižot, or Maribor Pumpkin Risotto, is a traditional Slovenian dish that showcases the delicious flavors of autumn. This creamy and comforting risotto is made with locally grown pumpkins and a few simple ingredients, creating a hearty and satisfying meal.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 1/2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the Arborio rice to the pot and stir to coat the rice with the butter, onion, and garlic mixture.
- Pour in the white wine and cook, stirring constantly, until the wine has been absorbed by the rice.
- Begin adding the vegetable broth, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
- After about 15 minutes, add the diced pumpkin to the risotto and continue adding the broth until the rice and pumpkin are tender and creamy.
- Stir in the grated Parmesan cheese and season with salt and pepper to taste.
- Remove the pot from the heat and let the risotto rest for a few minutes before serving.
