Maribor Pumpkin Risotto (Mariborski Bučni Rižot)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 1/2 cups Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the Arborio rice to the pot and stir to coat the rice with the butter, onion, and garlic mixture.
  3. Pour in the white wine and cook, stirring constantly, until the wine has been absorbed by the rice.
  4. Begin adding the vegetable broth, one ladleful at a time, stirring frequently and allowing each addition to be absorbed before adding the next.
  5. After about 15 minutes, add the diced pumpkin to the risotto and continue adding the broth until the rice and pumpkin are tender and creamy.
  6. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  7. Remove the pot from the heat and let the risotto rest for a few minutes before serving.
