Maribor Wine-Braised Lamb (Mariborsko Vino-Braženo Jagnje)

Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups Maribor wine
- 2 cups beef broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Season the lamb with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
- Add the chopped onion to the pot and cook until softened. Add the garlic and cook for another minute.
- Pour in the Maribor wine and beef broth, then return the lamb to the pot. Add the bay leaves and thyme.
- Bring the liquid to a simmer, then reduce the heat to low. Cover and let the lamb braise for 2 hours, or until tender.
- Once the lamb is tender, remove it from the pot and set aside. Skim any excess fat from the braising liquid and adjust the seasoning if needed.
- Return the lamb to the pot and heat through. Serve the Mariborsko Vino-Braženo Jagnje hot, with the braising liquid spooned over the top.
