Maribor Wine-Braised Lamb (Mariborsko Vino-Braženo Jagnje)

Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups Maribor wine
  • 2 cups beef broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the lamb and brown on all sides. Remove the lamb from the pot and set aside.
  3. Add the chopped onion to the pot and cook until softened. Add the garlic and cook for another minute.
  4. Pour in the Maribor wine and beef broth, then return the lamb to the pot. Add the bay leaves and thyme.
  5. Bring the liquid to a simmer, then reduce the heat to low. Cover and let the lamb braise for 2 hours, or until tender.
  6. Once the lamb is tender, remove it from the pot and set aside. Skim any excess fat from the braising liquid and adjust the seasoning if needed.
  7. Return the lamb to the pot and heat through. Serve the Mariborsko Vino-Braženo Jagnje hot, with the braising liquid spooned over the top.
