Ingredients
- 1 package of refrigerated pie crusts
- 2 cups cooked chicken, diced
- 1 cup frozen mixed vegetables
- 1/3 cup butter
- 1/3 cup chopped onion
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- 1 3/4 cups chicken broth
- 2/3 cup milk
Instructions
- Preheat the oven to 425°F (220°C).
- Roll out one pie crust and place it in a 9-inch pie dish.
- In a saucepan, melt the butter over medium heat. Add the onion and cook until translucent.
- Stir in the flour, salt, pepper, and celery seed until well combined.
- Gradually stir in the chicken broth and milk. Cook and stir until the mixture comes to a boil and thickens.
- Stir in the cooked chicken and mixed vegetables. Remove from heat.
- Pour the chicken mixture into the pie crust in the pie dish.
- Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal.
- Cut slits in the top crust to allow steam to escape.
- Bake for 30-35 minutes, or until the crust is golden brown.
- Let it cool for a few minutes before serving.
