Ingredients
- 1 lb white fish fillets
- 1 cup red onion, thinly sliced
- 1 cup carrot, julienned
- 1 cup red bell pepper, thinly sliced
- 1 cup green bell pepper, thinly sliced
- 1 cup vinegar
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a bowl, combine the fish fillets, cumin, paprika, oregano, salt, and pepper. Let it marinate for 10 minutes.
- In a large skillet, heat the vegetable oil over medium heat. Add the marinated fish and cook for 3-4 minutes on each side until golden brown. Remove the fish from the skillet and set aside.
- In the same skillet, add the red onion, carrot, and bell peppers. Cook for 5 minutes until the vegetables are slightly softened.
- Pour in the vinegar and bring to a simmer. Add the cooked fish back into the skillet and let it simmer for another 5 minutes.
- Remove from heat and let the dish cool to room temperature before serving.
