Marinated Fish (escabeche De Pescado)

Ingredients

  • 1 lb white fish fillets
  • 1 cup red onion, thinly sliced
  • 1 cup carrot, julienned
  • 1 cup red bell pepper, thinly sliced
  • 1 cup green bell pepper, thinly sliced
  • 1 cup vinegar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, combine the fish fillets, cumin, paprika, oregano, salt, and pepper. Let it marinate for 10 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the marinated fish and cook for 3-4 minutes on each side until golden brown. Remove the fish from the skillet and set aside.
  3. In the same skillet, add the red onion, carrot, and bell peppers. Cook for 5 minutes until the vegetables are slightly softened.
  4. Pour in the vinegar and bring to a simmer. Add the cooked fish back into the skillet and let it simmer for another 5 minutes.
  5. Remove from heat and let the dish cool to room temperature before serving.
