Mariscada

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb mussels, cleaned and debearded
- 1 lb clams, scrubbed
- 1 lb squid, cleaned and sliced into rings
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 cup tomato sauce
- 2 cups fish or seafood broth
- 1/2 cup white wine
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and bell peppers. Cook until the vegetables are softened.
- Pour in the white wine and let it simmer for a few minutes.
- Add the tomato sauce and seafood broth. Stir to combine.
- Bring the liquid to a simmer, then add the clams and mussels. Cover the pot and cook for 5 minutes.
- Add the shrimp and squid to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through.
- Season with salt and pepper, then sprinkle with fresh parsley before serving.
