Marmitako (spanish Sunset Seafood Stew)
Marmitako is a traditional Spanish seafood stew that originated in the Basque Country. This hearty and flavorful dish is perfect for a cozy evening meal, especially when served with crusty bread and a glass of wine.
Ingredients
- 2 lbs fresh tuna, cut into chunks
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 bell peppers, diced
- 4 tomatoes, peeled and chopped
- 1/2 cup white wine
- 4 cups fish or vegetable broth
- 1 lb potatoes, peeled and cut into chunks
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the bell peppers and tomatoes, and cook for 5 minutes.
- Pour in the white wine and let it simmer for 2 minutes.
- Add the fish or vegetable broth, potatoes, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the tuna chunks and cook for an additional 10 minutes, or until the tuna is cooked through.
- Adjust the seasoning if needed, and serve hot.
