Marqooq Bil Bamia (qatari Spiced Lamb Stew With Okra)

Ingredients

  • 1 lb lamb, cut into cubes
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1 cup chopped tomatoes
  • 2 cups fresh okra, trimmed
  • 3 cups chicken or vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the lamb cubes and cook until browned on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion and cook until softened. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Return the browned lamb to the pot and add the chopped tomatoes, okra, and chicken or vegetable broth. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 hour, or until the lamb is tender and the okra is cooked through.
  5. Serve the Marqooq Bil Bamia hot with rice or bread.
