Ingredients

  • 1.5 kg lamb, cut into chunks
  • 2 cups cooked chickpeas
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tablespoons tomato paste
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and cook until softened.
  2. Add the minced garlic, diced tomatoes, and tomato paste. Cook for a few minutes until the tomatoes start to break down.
  3. Add the lamb chunks to the pot and brown them on all sides.
  4. Stir in the ground cumin, coriander, turmeric, cinnamon, and cayenne pepper. Season with salt and pepper.
  5. Pour in the chicken or beef broth and bring the stew to a simmer. Cover and cook for 1.5 to 2 hours, or until the lamb is tender.
  6. Stir in the cooked chickpeas and let them heat through for a few minutes.
  7. Adjust the seasoning if needed and serve the Marqooq Bil Laham hot, garnished with fresh cilantro.
