Marqooq (spicy Saudi Arabian Beef Stew)
Marqooq is a traditional Saudi Arabian beef stew that is known for its rich and spicy flavors. This hearty dish is perfect for warming up on a cold day and is sure to satisfy your cravings for a comforting meal.
Ingredients
- 1 kg beef, cubed
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced
- 2 green chilies, sliced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp red chili powder
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- Salt to taste
- 2 tbsp vegetable oil
- 4 cups beef broth
- 2 potatoes, peeled and cubed
- 2 carrots, sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
- Add the beef to the pot and cook until it is browned on all sides.
- Stir in the tomatoes, green chilies, ground cumin, ground coriander, turmeric, red chili powder, ground cinnamon, ground cloves, and salt. Cook for 5 minutes, stirring occasionally.
- Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1 hour.
- Add the potatoes and carrots to the pot, and continue to simmer for an additional 30 minutes, or until the beef and vegetables are tender.
- Stir in the fresh cilantro and parsley, and cook for an additional 5 minutes.
- Remove the pot from the heat and let it sit for a few minutes before serving.
- Serve the marqooq hot, with lemon wedges on the side for squeezing over the stew.
