Marqooq (spicy Saudi Arabian Beef Stew)

Ingredients

  • 1 kg beef, cubed
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 green chilies, sliced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • Salt to taste
  • 2 tbsp vegetable oil
  • 4 cups beef broth
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, cut into wedges

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until they are soft and translucent.
  2. Add the beef to the pot and cook until it is browned on all sides.
  3. Stir in the tomatoes, green chilies, ground cumin, ground coriander, turmeric, red chili powder, ground cinnamon, ground cloves, and salt. Cook for 5 minutes, stirring occasionally.
  4. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 1 hour.
  5. Add the potatoes and carrots to the pot, and continue to simmer for an additional 30 minutes, or until the beef and vegetables are tender.
  6. Stir in the fresh cilantro and parsley, and cook for an additional 5 minutes.
  7. Remove the pot from the heat and let it sit for a few minutes before serving.
  8. Serve the marqooq hot, with lemon wedges on the side for squeezing over the stew.
