Marshallese Coconut Rice Balls

Ingredients
- 2 cups glutinous rice
- 1 1/2 cups coconut milk
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 cup sweetened shredded coconut
Instructions
- In a pot, combine the glutinous rice, coconut milk, sugar, and salt.
- Cook over medium heat, stirring constantly, until the mixture thickens and the rice is cooked, about 20 minutes.
- Remove from heat and let the mixture cool slightly.
- Take a small amount of the rice mixture and form it into a ball, then roll it in the sweetened shredded coconut.
- Repeat with the remaining rice mixture.
- Place the coconut rice balls on a plate and refrigerate for at least 30 minutes before serving.
