Marshallese Coconut Rice Balls

Ingredients

  • 2 cups glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup sweetened shredded coconut

Instructions

  1. In a pot, combine the glutinous rice, coconut milk, sugar, and salt.
  2. Cook over medium heat, stirring constantly, until the mixture thickens and the rice is cooked, about 20 minutes.
  3. Remove from heat and let the mixture cool slightly.
  4. Take a small amount of the rice mixture and form it into a ball, then roll it in the sweetened shredded coconut.
  5. Repeat with the remaining rice mixture.
  6. Place the coconut rice balls on a plate and refrigerate for at least 30 minutes before serving.
