Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup coconut milk
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups cooked rice, for serving
Instructions
- In a small bowl, mix together coconut milk, soy sauce, fish sauce, sugar, and black pepper. Set aside.
- Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and ginger, and stir-fry for 1 minute.
- Add shrimp to the pan and cook until pink and opaque, about 3-4 minutes.
- Push the shrimp to one side of the pan and add the sliced bell pepper and onion. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
- Pour the coconut milk mixture over the shrimp and vegetables. Stir well and cook for an additional 2 minutes.
- Serve the coconut shrimp stir-fry over cooked rice.
