Marshallese Coconut Shrimp Stir-fry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup coconut milk
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked rice, for serving

Instructions

  1. In a small bowl, mix together coconut milk, soy sauce, fish sauce, sugar, and black pepper. Set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat. Add garlic and ginger, and stir-fry for 1 minute.
  3. Add shrimp to the pan and cook until pink and opaque, about 3-4 minutes.
  4. Push the shrimp to one side of the pan and add the sliced bell pepper and onion. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  5. Pour the coconut milk mixture over the shrimp and vegetables. Stir well and cook for an additional 2 minutes.
  6. Serve the coconut shrimp stir-fry over cooked rice.
