Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1 lb ground chicken
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix the all-purpose flour, egg, water, and salt to make the pancake batter. Let it rest for 15 minutes.
  2. Heat vegetable oil in a pan and sauté the chopped onion and minced garlic until fragrant.
  3. Add the ground chicken, curry powder, turmeric powder, cumin powder, salt, and pepper. Cook until the chicken is fully cooked.
  4. Divide the pancake batter into 4 portions. Heat a non-stick pan and pour one portion of the batter, spreading it thinly to cover the pan.
  5. Once the pancake is set, spread a portion of the cooked chicken mixture on one half of the pancake.
  6. Pour a portion of the beaten eggs over the chicken mixture. Fold the other half of the pancake over the filling to form a half-moon shape.
  7. Cook the martabak on both sides until golden brown and crispy.
  8. Repeat the process with the remaining batter and filling.
  9. Slice the martabak into wedges and serve hot with your favorite dipping sauce.
