Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons Colombo spice blend
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 2 tablespoons vegetable oil
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with the Colombo spice blend, salt, and pepper.
  2. Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
  4. Add the chopped tomato and cook for an additional 2 minutes.
  5. Return the chicken thighs to the skillet and pour in the chicken broth. Bring to a simmer, then cover and cook for 25-30 minutes, or until the chicken is cooked through.
