Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons Colombo spice blend
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, diced
- 1 tomato, chopped
- 2 tablespoons vegetable oil
- 1 cup chicken broth
- Salt and pepper to taste
Instructions
- Season the chicken thighs with the Colombo spice blend, salt, and pepper.
- Heat the vegetable oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are softened, about 5 minutes.
- Add the chopped tomato and cook for an additional 2 minutes.
- Return the chicken thighs to the skillet and pour in the chicken broth. Bring to a simmer, then cover and cook for 25-30 minutes, or until the chicken is cooked through.
