Mary Palov (mary's Plov)

Ingredients
- 2 cups basmati rice
- 1 lb lamb, cut into chunks
- 1 large onion, thinly sliced
- 3 carrots, julienned
- 1/2 cup vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 4 cups chicken or beef broth
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and cook until browned on all sides.
- Add the sliced onions and cook until they are soft and translucent.
- Stir in the cumin seeds, ground coriander, and ground turmeric, and cook for another 2 minutes to toast the spices.
- Add the julienned carrots and continue to cook for 5 minutes.
- Stir in the basmati rice, making sure it is well coated with the oil and spices.
- Pour in the chicken or beef broth, season with salt and pepper, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then cover and let it rest for 5 minutes before serving.
