Mary Palov (mary's Plov)

Ingredients

  • 2 cups basmati rice
  • 1 lb lamb, cut into chunks
  • 1 large onion, thinly sliced
  • 3 carrots, julienned
  • 1/2 cup vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 4 cups chicken or beef broth
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and cook until browned on all sides.
  2. Add the sliced onions and cook until they are soft and translucent.
  3. Stir in the cumin seeds, ground coriander, and ground turmeric, and cook for another 2 minutes to toast the spices.
  4. Add the julienned carrots and continue to cook for 5 minutes.
  5. Stir in the basmati rice, making sure it is well coated with the oil and spices.
  6. Pour in the chicken or beef broth, season with salt and pepper, and bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork, then cover and let it rest for 5 minutes before serving.
