Mary's Meatball Soup (Mary Köfte Çorbası)

Ingredients

  • 500g ground beef
  • 1 onion, grated
  • 1/2 cup rice
  • 1 egg
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 carrots, diced
  • 2 potatoes, diced
  • 6 cups beef or vegetable broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix the ground beef, grated onion, rice, egg, cumin, paprika, salt, and pepper. Form the mixture into small meatballs.
  2. In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs and set aside.
  3. In the same pot, add the diced carrots and potatoes. Sauté for 5 minutes.
  4. Stir in the tomato paste and cook for 2 minutes.
  5. Pour in the beef or vegetable broth and bring to a boil.
  6. Reduce the heat to low, add the meatballs back into the pot, and simmer for 30 minutes or until the meatballs are cooked through and the vegetables are tender.
  7. Season with additional salt and pepper if needed.
  8. Serve the soup hot, garnished with fresh parsley.
