Mary's Meatball Soup (Mary Köfte Çorbası)
Mary Köfte Çorbası, or Mary's Meatball Soup, is a traditional dish from Turkmen Cuisine that is hearty, flavorful, and perfect for a comforting meal. This soup is packed with tender meatballs, vegetables, and aromatic spices, making it a satisfying and delicious option for lunch or dinner.
Ingredients
- 500g ground beef
- 1 onion, grated
- 1/2 cup rice
- 1 egg
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 carrots, diced
- 2 potatoes, diced
- 6 cups beef or vegetable broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- In a large bowl, mix the ground beef, grated onion, rice, egg, cumin, paprika, salt, and pepper. Form the mixture into small meatballs.
- In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs and set aside.
- In the same pot, add the diced carrots and potatoes. Sauté for 5 minutes.
- Stir in the tomato paste and cook for 2 minutes.
- Pour in the beef or vegetable broth and bring to a boil.
- Reduce the heat to low, add the meatballs back into the pot, and simmer for 30 minutes or until the meatballs are cooked through and the vegetables are tender.
- Season with additional salt and pepper if needed.
- Serve the soup hot, garnished with fresh parsley.
