Mas Rihaakuru Dhals (spicy Lentil Soup)

Ingredients

  • 1 cup red lentils
  • 4 cups water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 green chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp Rihaakuru (Maldivian fish paste)
  • 2 tbsp coconut oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils in cold water until the water runs clear.
  2. In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Add the onion, garlic, ginger, tomatoes, green chili, turmeric, cumin, coriander, and salt to the pot. Cook for another 10 minutes.
  4. Stir in the Rihaakuru and coconut oil, and cook for an additional 5 minutes.
  5. Adjust seasoning if needed and serve hot, garnished with fresh cilantro.
