Mas Rihaakuru Pie (maldivian Fish Pie)

Ingredients
- 500g white fish fillets, cut into chunks
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 green chili, finely chopped
- 1 tomato, chopped
- 2 tbsp rihaakuru (Maldivian fish paste)
- 1/2 cup coconut milk
- 2 tbsp curry leaves
- Salt to taste
- Pepper to taste
- 2 sheets of puff pastry
Instructions
- In a pan, sauté the onion, garlic, and green chili until fragrant.
- Add the tomato, rihaakuru, coconut milk, curry leaves, salt, and pepper. Cook for 5 minutes.
- Add the fish fillets and cook for another 5 minutes until the fish is cooked through.
- Preheat the oven to 200°C (390°F).
- Line a pie dish with one sheet of puff pastry.
- Pour the fish mixture into the pie dish.
- Cover the pie with the remaining sheet of puff pastry and seal the edges.
- Brush the top of the pie with beaten egg for a golden finish.
- Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown.
- Serve the Mas Rihaakuru Pie hot and enjoy!
