Ingredients

  • 2 cups mas rihaakuru (Maldivian fish and coconut paste)
  • 1 cup shredded cheese
  • 8 small flour tortillas
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped cilantro
  • 1/4 cup diced tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Place a tortilla in the skillet and spread 1/4 cup of mas rihaakuru evenly over the tortilla.
  3. Sprinkle a handful of shredded cheese over the mas rihaakuru.
  4. Add a portion of diced onions, bell peppers, cilantro, and tomatoes on top of the cheese.
  5. Season with salt and pepper, then cover with another tortilla.
  6. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  7. Repeat with the remaining ingredients to make 4 quesadillas.
  8. Slice the quesadillas into wedges and serve hot.
