Ingredients
- 2 cups mas rihaakuru (Maldivian fish and coconut paste)
- 1 cup shredded cheese
- 8 small flour tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup chopped cilantro
- 1/4 cup diced tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and add 1 tablespoon of olive oil.
- Place a tortilla in the skillet and spread 1/4 cup of mas rihaakuru evenly over the tortilla.
- Sprinkle a handful of shredded cheese over the mas rihaakuru.
- Add a portion of diced onions, bell peppers, cilantro, and tomatoes on top of the cheese.
- Season with salt and pepper, then cover with another tortilla.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining ingredients to make 4 quesadillas.
- Slice the quesadillas into wedges and serve hot.
