Masala Dosa Delight
Masala Dosa is a popular South Indian dish that has made its way into Anglo-Indian cuisine. This crispy, savory pancake filled with a spiced potato filling is a delightful treat for any meal of the day.
Ingredients
- 2 cups rice flour
- 1/2 cup urad dal (black gram) flour
- 1/2 tsp fenugreek seeds
- 1/2 tsp salt
- 3-4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp asafoetida (hing)
- Curry leaves
- Oil for cooking
Instructions
- In a large bowl, mix the rice flour, urad dal flour, fenugreek seeds, and salt. Add water to make a smooth batter. Let it ferment overnight.
- For the potato filling, heat oil in a pan and add mustard seeds. Once they splutter, add cumin seeds, asafoetida, and curry leaves. Add onions and green chilies, sauté until onions are translucent. Add turmeric powder and mashed potatoes. Mix well and cook for a few minutes. Set aside.
- Heat a non-stick pan and pour a ladleful of the dosa batter. Spread it in a circular motion to make a thin pancake. Drizzle oil around the edges and cook until crispy.
- Place a portion of the potato filling in the center of the dosa. Fold the dosa over the filling and serve hot.
