Masala Dosa Wraps

Ingredients
- 2 cups rice flour
- 1/2 cup urad dal (split black lentils)
- 3 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- Oil for cooking
Instructions
- In a bowl, mix rice flour and urad dal with water to make a smooth batter. Let it ferment for 6-8 hours.
- Heat oil in a pan, add mustard seeds, cumin seeds, and green chilies. Sauté for a minute.
- Add chopped onions and sauté until they turn golden brown.
- Add turmeric powder, mashed potatoes, and salt. Mix well and cook for 2-3 minutes. Add coriander leaves and mix again. Remove from heat and set aside.
- Heat a non-stick pan and pour a ladleful of dosa batter. Spread it in a circular motion to make a thin dosa. Drizzle oil around the edges and cook until crispy.
- Place a portion of the potato masala in the center of the dosa. Roll it up to make a wrap. Repeat with the remaining batter and masala.
