Masala Khichdi Magic

Ingredients

  • 1 cup basmati rice
  • 1/2 cup split yellow lentils (moong dal)
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 green chili, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 2 cloves
  • 2 green cardamom pods
  • 1 cinnamon stick
  • 2 tablespoons ghee (clarified butter) or oil
  • Salt to taste
  • 4 cups water

Instructions

  1. Wash the rice and lentils together, then soak for 15 minutes. Drain and set aside.
  2. Heat ghee or oil in a pressure cooker or large pot. Add cumin seeds, cloves, cardamom, and cinnamon. Sauté until fragrant.
  3. Add the chopped onions, green chili, and ginger-garlic paste. Sauté until the onions are golden brown.
  4. Add the chopped tomato, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and oil starts to separate.
  5. Add the soaked rice and lentils. Sauté for 2 minutes.
  6. Pour in the water and mix well. Close the pressure cooker or pot with a lid and cook for 3 whistles or about 15 minutes on low heat.
  7. Once the pressure releases, open the cooker or pot and gently fluff the khichdi with a fork.
  8. Serve hot with a dollop of ghee and your favorite side dish.
