Masale Bhaat (मसाले भात)
मसाले भात (Masale Bhaat) is a traditional Maharashtrian rice dish that is flavorful and aromatic. It is a one-pot meal that combines rice with a variety of spices and vegetables, making it a wholesome and delicious option for lunch or dinner.
Ingredients
- 2 cups basmati rice
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 cup mixed vegetables (peas, carrots, beans)
- 4-5 cloves garlic, minced
- 1-inch ginger, grated
- 2-3 green chilies, slit
- Whole spices (cinnamon, cloves, cardamom)
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tsp garam masala
- 2 tbsp oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- Heat oil in a large pot or pressure cooker. Add the cumin seeds and whole spices. Sauté until fragrant.
- Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onion turns golden brown.
- Stir in the chopped tomato and cook until it turns soft and mushy.
- Add the mixed vegetables and sauté for a few minutes.
- Now, add the turmeric powder, red chili powder, and garam masala. Mix well.
- Add the soaked rice and salt. Stir gently to combine everything.
- Pour in 4 cups of water and bring it to a boil. If using a pressure cooker, cover with the lid and cook for 2 whistles. If using a pot, cover with a lid and cook on low heat until the rice is fully cooked.
- Once done, fluff the rice with a fork and garnish with fresh coriander leaves.
