Masale Bhaat (मसाले भात)

मसाले भात (Masale Bhaat) is a traditional Maharashtrian rice dish that is flavorful and aromatic. It is a one-pot meal that combines rice with a variety of spices and vegetables, making it a wholesome and delicious option for lunch or dinner.

Ingredients

  • 2 cups basmati rice
  • 1 large onion, finely chopped
  • 1 large tomato, finely chopped
  • 1 cup mixed vegetables (peas, carrots, beans)
  • 4-5 cloves garlic, minced
  • 1-inch ginger, grated
  • 2-3 green chilies, slit
  • Whole spices (cinnamon, cloves, cardamom)
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp garam masala
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. Heat oil in a large pot or pressure cooker. Add the cumin seeds and whole spices. Sauté until fragrant.
  3. Add the chopped onion, garlic, ginger, and green chilies. Sauté until the onion turns golden brown.
  4. Stir in the chopped tomato and cook until it turns soft and mushy.
  5. Add the mixed vegetables and sauté for a few minutes.
  6. Now, add the turmeric powder, red chili powder, and garam masala. Mix well.
  7. Add the soaked rice and salt. Stir gently to combine everything.
  8. Pour in 4 cups of water and bring it to a boil. If using a pressure cooker, cover with the lid and cook for 2 whistles. If using a pot, cover with a lid and cook on low heat until the rice is fully cooked.
  9. Once done, fluff the rice with a fork and garnish with fresh coriander leaves.
