Masaledar Gosht Biryani (spicy Lamb Biryani)

Ingredients

  • 2 lbs lamb, cut into pieces
  • 2 cups basmati rice, soaked for 30 minutes
  • 1/2 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chilies, slit
  • 1/4 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup ghee
  • 2 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp cumin seeds
  • 4 cups water
  • Salt to taste

Instructions

  1. Heat ghee in a large pot and add cumin seeds. Once they splutter, add sliced onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for 2 minutes. Then, add the lamb pieces and cook until they are browned.
  3. Stir in the chopped tomatoes, green chilies, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft.
  4. Layer the soaked rice over the lamb mixture. Sprinkle garam masala, coriander leaves, and mint leaves on top.
  5. Pour water over the rice and lamb. Cover the pot and cook on low heat for 25-30 minutes, or until the rice and lamb are fully cooked.
  6. Once done, gently fluff the biryani with a fork and serve hot.
