Ingredients

  • 1 cup red lentils, rinsed
  • 2 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 can (14 oz) diced tomatoes
  • 2 cups mixed vegetables (such as carrots, bell peppers, and zucchini), chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, combine the red lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Add the onion, garlic, turmeric, cumin, coriander, and paprika to the pot. Cook for 5 minutes, stirring occasionally.
  3. Stir in the diced tomatoes and mixed vegetables. Simmer for an additional 15-20 minutes, or until the lentils and vegetables are tender.
