Masgouf (kurdish Lentil And Vegetable Curry)
Masgouf is a traditional Kurdish lentil and vegetable curry that is bursting with flavor and nutrition. This hearty and aromatic dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 cup red lentils, rinsed
- 2 cups water
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 can (14 oz) diced tomatoes
- 2 cups mixed vegetables (such as carrots, bell peppers, and zucchini), chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, combine the red lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the onion, garlic, turmeric, cumin, coriander, and paprika to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the diced tomatoes and mixed vegetables. Simmer for an additional 15-20 minutes, or until the lentils and vegetables are tender.
- Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
