Mash Chorba is a traditional Uyghur lentil soup from Xinjiang, China. This hearty and flavorful soup is a staple in Uyghur cuisine and is perfect for warming up on a cold day.

Mash Chorba (uyghur Lentil Soup)

Ingredients

  • 2 cups red lentils
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1/4 cup vegetable oil
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • Salt to taste
  • 6 cups water

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
  3. Add the diced tomatoes, sliced carrots, and diced potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Stir in the cumin, paprika, and salt. Cook for another 2 minutes.
  5. Add the rinsed lentils to the pot and pour in the water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the lentils and vegetables are tender.
  6. Adjust the seasoning if needed, then serve hot.
