Mash Chorba (uyghur Lentil Soup)
Mash Chorba is a traditional Uyghur lentil soup from Xinjiang, China. This hearty and flavorful soup is a staple in Uyghur cuisine and is perfect for warming up on a cold day.
Ingredients
- 2 cups red lentils
- 1 onion, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 potatoes, diced
- 1/4 cup vegetable oil
- 1 tablespoon cumin
- 1 tablespoon paprika
- Salt to taste
- 6 cups water
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until translucent.
- Add the diced tomatoes, sliced carrots, and diced potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Stir in the cumin, paprika, and salt. Cook for another 2 minutes.
- Add the rinsed lentils to the pot and pour in the water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed, then serve hot.
