Ingredients
- 1 lb ground lamb
- 1 small onion, grated
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup pomegranate molasses
- 1/4 cup olive oil
- Wooden skewers, soaked in water
Instructions
- In a large bowl, mix the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper until well combined.
- Divide the lamb mixture into 8 equal portions and shape each portion into a long, sausage-like kofta around a wooden skewer.
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together the pomegranate molasses and olive oil to make the glaze.
- Grill the kofta skewers for about 6-8 minutes, turning occasionally, until they are cooked through and slightly charred.
- During the last few minutes of grilling, brush the kofta with the pomegranate glaze, allowing it to caramelize.
- Once cooked, remove the kofta from the grill and let them rest for a few minutes before serving.
