Mashawi Bil Kofta (spiced Lamb Kofta With Pomegranate Glaze)

Ingredients

  • 1 lb ground lamb
  • 1 small onion, grated
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup pomegranate molasses
  • 1/4 cup olive oil
  • Wooden skewers, soaked in water

Instructions

  1. In a large bowl, mix the ground lamb, grated onion, minced garlic, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper until well combined.
  2. Divide the lamb mixture into 8 equal portions and shape each portion into a long, sausage-like kofta around a wooden skewer.
  3. Preheat the grill to medium-high heat.
  4. In a small bowl, whisk together the pomegranate molasses and olive oil to make the glaze.
  5. Grill the kofta skewers for about 6-8 minutes, turning occasionally, until they are cooked through and slightly charred.
  6. During the last few minutes of grilling, brush the kofta with the pomegranate glaze, allowing it to caramelize.
  7. Once cooked, remove the kofta from the grill and let them rest for a few minutes before serving.
