Mashboos Lahm (grilled Beef Kofta)

Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups basmati rice
  • 4 cups chicken broth
  • 1 tomato, diced
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix the ground beef, chopped onion, minced garlic, cumin, coriander, cayenne pepper, salt, and pepper. Form the mixture into kofta (sausage-shaped) patties.
  2. Heat vegetable oil in a large pot over medium heat. Add the kofta patties and cook until browned on all sides. Remove the kofta from the pot and set aside.
  3. In the same pot, add the diced tomato and tomato paste. Cook for 2-3 minutes, then add the basmati rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
  4. Once the rice is cooked, return the kofta to the pot and let it simmer for an additional 5-10 minutes.
  5. Remove from heat and let it rest for a few minutes before serving. Garnish with fresh parsley.
