Mashboos Lahm (grilled Beef Kofta)
Mashboos Lahm is a popular Kuwaiti dish consisting of grilled beef kofta served with flavorful rice. This dish is a staple in Kuwaiti cuisine and is perfect for a hearty and satisfying meal.
Ingredients
- 500g ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups basmati rice
- 4 cups chicken broth
- 1 tomato, diced
- 2 tablespoons tomato paste
- 2 tablespoons vegetable oil
- Fresh parsley for garnish
Instructions
- In a bowl, mix the ground beef, chopped onion, minced garlic, cumin, coriander, cayenne pepper, salt, and pepper. Form the mixture into kofta (sausage-shaped) patties.
- Heat vegetable oil in a large pot over medium heat. Add the kofta patties and cook until browned on all sides. Remove the kofta from the pot and set aside.
- In the same pot, add the diced tomato and tomato paste. Cook for 2-3 minutes, then add the basmati rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
- Once the rice is cooked, return the kofta to the pot and let it simmer for an additional 5-10 minutes.
- Remove from heat and let it rest for a few minutes before serving. Garnish with fresh parsley.
