Ingredients
- 4 cups of black-eyed beans
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 bell peppers, chopped
- 1 cup of palm oil
- 2 tablespoons of ground crayfish
- 2 tablespoons of ground cayenne pepper
- Salt to taste
Instructions
- Wash the beans and place in a pot. Add enough water to cover the beans and cook until very soft.
- While the beans are cooking, heat the palm oil in a separate pot and sauté the onions, tomatoes, and bell peppers until soft.
- Add the ground crayfish, cayenne pepper, and salt to the sautéed vegetables. Stir well and let it simmer for 10 minutes.
- Once the beans are soft, drain any excess water and mash the beans until smooth.
- Add the mashed beans to the spicy sauce and stir well to combine. Let it simmer for an additional 10 minutes.
- Remove from heat and serve the mashed beans hot, topped with extra spicy sauce if desired.
