Mashed Beans (ewa Agoyin Bliss)

Ingredients

  • 4 cups of black-eyed beans
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 bell peppers, chopped
  • 1 cup of palm oil
  • 2 tablespoons of ground crayfish
  • 2 tablespoons of ground cayenne pepper
  • Salt to taste

Instructions

  1. Wash the beans and place in a pot. Add enough water to cover the beans and cook until very soft.
  2. While the beans are cooking, heat the palm oil in a separate pot and sauté the onions, tomatoes, and bell peppers until soft.
  3. Add the ground crayfish, cayenne pepper, and salt to the sautéed vegetables. Stir well and let it simmer for 10 minutes.
  4. Once the beans are soft, drain any excess water and mash the beans until smooth.
  5. Add the mashed beans to the spicy sauce and stir well to combine. Let it simmer for an additional 10 minutes.
  6. Remove from heat and serve the mashed beans hot, topped with extra spicy sauce if desired.
